Head Chef James Andrew

James’ passion for cooking came at an early age, and he recall's making bilberry pie with his mum, using fresh bilberries they had picked on Holcombe hill.

On leaving school James went on to a three year diploma in catering, at Bolton Catering College. His first job was as a commis chef at the Red Hall Hotel, near Ramsbottom, he then moved to Astley Bank which was then ICI's private training centre. He worked up through the ranks and became head chef at the age of 25, when the business changed dramatically and became the Astley Bank Hotel.

This brought on many new challenges and James was able flourish and advance his skills. He is mainly self taught through reading many culinary books and constantly experiments with the freshest local produce available. He describes his food as modern English with a Mediterranean influence. When not working James enjoys spending time with his wife Karen and two sons Jacob and Tom. He also enjoys playing five a side football, golf and walking in the lakes.
